Local Boston eatery strives to be green

Boston restaurant, Erbaluce, makes it a priority in their cooking to use fresh, local ingredients and reduce their waste output.

Joan Johnson and her husband, Charles Draghi, are the owners of the Boston-based Italian restaurant, Erbaluce, located in the Theater District. Johnson and her husband are committed to providing local foods and dishes to their customers.

Despite not being certified a green restaurant, Johnson said this doesn't deter Erbaluce from recycling, using local products, and limiting their waste output. Johnson said the only non-local product in the restaurant is the wine, which they import from Italy.
